MOVING AHEAD…

After a rough year for starting a business, we are happy to keep moving and growing! We almost ran out of our Tabasco cacao beans and our next shipment will be at the end of September. What can you expect of this?

We will be bringing again our traditional organic Tabasco Blend of trinitarios, but we are adding:

  • Cacao almendra blanca or ‘White almond’. This is an acriollado bean very special in flavor, floral and fruity notes with low acidity. This is only under request. Samples will be available from July 8th until August 25th to order for the September shipment. Write to request yours!
  • Vanilla beans from Papantla Veracruz and Tamaulipas. Organic and conventional.
  • All spice pepper. Have you tried this spice in chocolate? It’s delicious
  • Cacao nibs with our Tabasco blend.
  • Raw honey from Melipona bees. 500 ml and 1Lt available.

WHATS MELIPONA HONEY?

This honey comes from special wild bees called Meliponas. These bees don’t live in combs like usual but in tree holes naturally. When farmers take care of them, they build little boxes or recipients.

This honey is very special due to its medicinal properties. It is antibacterial, helps improve your immune system, digestion and with skin rashes/irritations. You can apply 1 drop directly into your eye and it will help with dryness, infections or cataracts.

It tends to be more expensive than regular honey because one comb only produces from 500 ml to 2 liters per year. These amazing bees are being threatened and their populations are being reduced due tree felling and destruction of their habitat, and it is the farmers which are helping to grow the populations again. Melipona honey is considered Mayan medicine.


Melipona Scaptotrigona bee is small and black, stingless. This honey is produced by a cooperative of small farmers in Puebla state. After harvest, this honey is fermented for 8 months. Its flavor is different from usual and it is more liquid. Farmers use it for medicinal purposes in their regular diet.

Melipona Beechi is another type. This is produced by a farmer in the jungle of Yucatan. This is not fermented prior to packing but due to its higher water content vs. regular honey, it tends to ferment eventually (by the way, it is totally safe and very healthy to eat fermented honey).

As we grow, we want to keep adding more Mexican origins to our catalog. We are working very hard to improve and become the best option for you. Let us grow together in this fantastic project.
